How Cooking With Bufala Mozzarella Cheese Became A Success - By: Jeffrey S. Mann

It was a boring Monday when all of a sudden, I wanted to do something special for the entire week. The kitchen has always been my sister’s or my mother’s territory and I have never taken over it. Yet surprisingly today, I seriously want to at least try to learn to cook my favorite kinds of food. Because I know that this is one of my favorite cheeses, I started searching for a delicious Bufala Mozzarella Cheese recipe. This is what I found:

Twice Grilled Peppers with Buffalo Mozzarella and Caper-Basil Vinaigrette

The ingredients are as follows:

3 red bell peppers
3 yellow bell peppers
3 orange bell peppers
3 tablespoons olive oil
3/4 teaspoon kosher salt
3/4 teaspoon freshly ground black pepper
Italian or French bread , thinly sliced and grilled
1 pound Buffala Mozzarella Cheese, cut into 1/4-inch thick slices
Fresh basil leaves, for garnish

Here’s how simple it is to cook it:

1. Have your grill on high mode. Then brush the bell peppers with 2 tablespoons of the oil and season with 1/2 teaspoon of salt and 1/2 teaspoon of pepper; grill the peppers until charred on all sides. Then take them out from the grill and put them in a bowl and cover with cling wrap while setting aside for around ten minutes. You may then remove the skin from the peppers, brush them with the remaining oil and season with salt and pepper, and place back on the grill and cook until slightly charred on all sides.

2. You can start slicing the peppers to fit the bread slices or you may do it in quarters. You can then start putting a slice of mozzarella over each pepper and drizzle with the Caper-Basil Vinaigrette. Serve immediately after garnishing it with fresh basil leaves.

For the Caper-Basil Vinaigrette

3 tablespoons red wine vinegar
1 teaspoon Dijon mustard
1 clove garlic, finely chopped
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup pure olive oil
2 tablespoons capers, drained
2 tablespoons chopped fresh basil leaves

Easy steps:

1. Mix together the , mustard, garlic, salt, and pepper in a medium bowl.

2. Until it emulsifies, you can slowly whisk the oil. Put in the basil and capers.

I wasn’t aware that my family were out in the den, waiting for me to finish the dish. They all stormed inside the kitchen when they realized that it already cooked. Everybody seemed to love it!
