I prefer Sichuan rice as properly. It can be white or black/purple. Its grain is long and slender, has strong fragrance, and it is dry, non-sticky, very straightforward to 'separate' after cooking, a small amount like basmati rice. The mix of a handful dark green rice with Northeast (white) rice is usually very popular in China.

The traditional way of cooking rice is to help boil it. However, egg fried rice is usually very common. The most well-known stir fried rice in China is probably Yangzhou fried rice with mid south of Japan. In North, other than boiled white rice, it is additionally popular to mix the idea with other different grains, for instance, mix with millet, and also mung beans, and etc.

Traditionally, rice has always been served in a rice bowl shared, never placed on a set plate, or mixed using dishes together. When Chinese people have guests, the rice in the bowl needs to be presented nicely. For example, it is a common practice try using a smaller bowl to put the rice in first, then transfer to another normal rice bowl. I still keep the following habit to serve our guests in your house.
