Many people today strive to be healthy by turning to the option of vegetarian cooking. It has been suggested that many of the proteins and amino acids we ingest every time we eat meat are not necessary, and can even be harmful to our overall health.

Opinions are still divided regarding which edible plants provide the best nutritional values for anyone who chooses a vegetarian diet. There are some who have no choice, unable to eat meat products due to allergies and illnesses. They are obliged to choose their food carefully, and with this in mind.

Others will opt for a lifestyle which includes a meat-free menu for other reasons which all have their own merits. These may include religious principles, and other ethical or philosophical judgements and opinions. There is a growing number who would argue that it is morally indefensible to raise farm stock for the express purpose of killing them in order to eat the meat thus provided. Taken to the logical extreme, some of this group would refer to themselves as Vegan rather than Vegetarian.

Every religion considers Life to be something sacred: this is expressed in one way or another in all forms of prayer. Buddhism is almost synonymous with pacifism, and as a consequence many practitioners opt for a simple vegetarian existence.

One group of vegetables are gathered from the farms and gardens where they grow fully ripened and ready to eat. These are given the convenient label of"salad vegetables".

Some vegetables are too solid (or 'dense') to be enjoyed in their natural, raw state. These include roots such as beet, turnip and potato, and need to be softened by cooking before we can chew and swallow them easily. Boiling, steaming and baking are three cooking methods popular with vegetarian cooks, who will tend to avoid anything which involves frying. This is because it is not always possible to know if the oils used might have originated from animal sources.

On reflection, it is easy to believe that the section of every Vegetarian Cooking manual which is going to prove invaluable to every budding chef is the one which lists the widest range of sauces and gravies which will enhance the flavour of the humblest dish.
