Its base ingredient is fresh olives, with various other ingredients added for flavor. Some people add herbs, brandy, or lemon juice, depending on the dish they are preparing. It can either be used as an appetizer or condiment.

Gourmet olives may also be used as relish to complement some other dishes. It can be either pure black olive relish or mixed black and green ones. Olive-based relish is mixed with other herbs, spices, and extra virgin olive oil for better taste.
