This is a Spanish mushroom recipe that will satisfy any mushroom lovers in your family.

It serves about six, and can be served as a side dish or a main meal depending on portion sizes.


Mushrooms With Sherry and Walnuts Recipe

You Will Need:

Two Tbs margarine
Two Tbs olive oil
1/2 pound (3 cup) organic mushrooms
a half cup of finely chopped and roasted walnuts
Two Tbs sherry or fortified wine
1 Tablespoon lemon juice
1 teaspoon grated orange/lemon peel
Two Tbs parsley (finely chopped)
Salt to taste


Method:

In a skillet or frying pan blend the oil and butter.

Increase the heat to medium and put the mushrooms in the skillet, saute them gently until they are tender.

Now add the sherry, lemon juice, walnuts and citrus peel. Heat the mix for a minute or so, stirring well to guarantee the mushrooms are well coated with the lovely juices.

Sprinkle with parsley and season with salt before serving.
