Some experts claim that darker oils are better because they carry the best qualities. To be labeled extra virgin, the oil must have an acidity level lower than 0.6%. This makes the oil perfect for using on salads and other fresh meals.

Since olives are fruits, olive oils are basically fruit juice. Unlike wine, they turn rancid when not eaten within a few months. When you have purchased a bottle of olive oil, one way to prolong the life of fresh oil is to keep it away from light. Storing them in dark bottles and closed kitchen cabinets are recommended. When you buy olives for pizza or other dishes, storing them in airtight containers in the refrigerator helps, but you must use them before they become less plump.

You can choose among fresh, dried, or stuffed olives that they sell. Olive and dry martini mixes are also available in some websites online.
