Basmati Rice and Chicken Recipe - By: joanwrites

Many people have probably had rice chicken recipes as this is a household favorite to many. However one can add some twist to this familiar favorite by putting in a little creativity into its preparation. To make the rice, one needs; 1 cup of basmati rice, 2 cups of water, 1 tablespoon of olive oil, 1 tablespoon of salt, almonds, chopped carrots and onions.

The olive oil is first placed in a saucepan, add the rice and onions. Stir for about two minutes until the rice starts to turn brown on the edges. Caution should be taken so that the rice does not over fry. Add salt and water. Leave the food to cook on low heat for 20 minutes. Remove from heat and cover for 5 minutes, fluff and add the other ingredients.

To make the chicken, one needs; 1 fried chicken breast, 2 teaspoons of olive oil, 1 tomato, sliced garlic, salt and pepper. Place the garlic and oil in a saucepan and add the sliced tomato when the garlic is cooked. Stir until a paste is formed and add salt to taste. Add little water to prevent the paste from drying on the pan. Place the fried chicken breast and leave it to cook for about 5 minutes on low heat. Make sure you turn the chicken to have the paste into the whole piece and not only one side. Remove when ready.

For people who do not have tomatoes, they can make a paste that can be added to the fried breast. One needs 1 teaspoon of white vinegar (preferably wine vinegar), honey, mustard and soy sauce each. These three ingredients are mixed together to come up with a paste which is served with the chicken recipe. To have the taste of garlic one can fry the chicken in it. This food is best served warm.
