Basmati Rice is a popular variety of rice famous for its sweet fragrance & taste. From long ago, it has been included in the royal menus of different cultures as the principal dish. Whether it is polou of Persia, pilav of Turkey, pulau of India or pilafs of the Steppes, basmati rice is the key ingredient used in all of them. Though other things like vegetables, dried fruits, spices & nuts constitute secondary ingredients but the taste of rice comes mainly from basmati rice. Basmati rice adds taste to rice dishes & transform them into luxurious meals.
Basmati rice popularly known as the “Queen of Rice” is a highly aromatic rice type that is elegantly thin & long in texture. The name Basmati is derived from the word “Vasumati” which literally means earth recognized from its aroma or fragrance. India & Pakistan are the tow largest exporters & cultivators of basmati rice. White & brown are two main varieties in which basmati rice is available in market. There also exist traditional & hybrid varieties of basmati rice. Basmati-Ranbirsinghpura(R.S.Pura), Basmati-370 & Basmati-385 come under traditional varieties while Pusa Basmati 1 is included in hybrid varieties. PB2, PB3 & RH-10 are among other fragrant rice varieties produced from basmati stock but are not real basmati types.
The basmati rice produced in India is often considered to be of best quality. The foot of the Himalayan mountain ranges is famous for cultivation of basmati rice for more than thousand years. The rivers Sutluj & Yamuna help irrigating the basmati paddy fields in Punjab & Haryana respectively. Proper ageing is required to lower the moisture content in basmati plants. The minimized moisture content would help obtain the perfect flavor & aroma in basmati rice. Karnal also referred to as the “rice bowl of India” produces the premium quality basmati rice. Kaithal, Panipat, Kurukshetra, Ambala districts of Haryana, Jammu, Dehradoon region of Uttaranchal, Punjab are some places where basmati is cultivated these days.
Characteristic Features of Indian Basmati Rice:
· Source: Original basmati rice is produced at the foothills of the Himalayas in northern India. Indian basmati variety is always considered superior to that sourced from Pakistan.
· Appearance: They are normally long, dry & separate grains which are mostly white in color. Unlike other rice varieties they remain firm & tender without splitting & are thus non-sticky upon cooking.
· Fragrance: They deliver distinctive flavor which is pleasant enough.
· Use: The Indian basmati rice is widely used in lavish dishes like pilaf, biriyani etc.
